Don’t Miss A Visit to Gibson & Company in Collingwood

I don’t know why I have not shared this gem with you until now.  Maybe subconsciously I wanted to keep it a secret to savour.  But alas, word is out so let’s talk about Gibson & Co.

Is it a café? A bar? A restaurant or a gathering place? Really it is all of those and this hidden gem in downtown Collingwood has somehow nailed down a new concept that has met with real success and created raving fans.

First opened in June, 2017, Gibson’s is somewhat hidden down a narrow alleyway just north of the Town Hall on the main street.  Perhaps finding it is part of the allure.  Once you enter, you could imagine being in Amsterdam or some other European city where the urban industrial décor is unpretentious, comfortable and easy on the eyes.  A large skylight opens to an apartment deck above where on some days, the tenant’s laundry may be flapping in the wind.

Gibsons is owned and operated by two young guys, Luke Anderson and Keaton Grieve. They describe it on their website as:

“… a place to enjoy a carefully curated selection of quality coffee, wine, whiskey, and beer. A place to enjoy drinks and small eats at all times of the day, be it a cup of coffee and a croissant to start your day or a glass of wine and some chocolate to cap off your night. Featuring all-day espresso with brewed coffee and shifting to booze in the late afternoon and evening…”

They serve outstanding Pilot brand coffee and trust me, the treats in the café are delectable.  You can enjoy a variety of foods through-out the day such gourmet grill cheese sandwiches, cheese boards, pates and small plate meals.  In the afternoons and evenings, there is an outstanding selection of local and North American whiskeys, wines and beers.  There are special events ranging from educational events (pairing whiskey and chocolate for example) to wine tastings and their java equivalents – coffee cuppings.  There is occasional entertainment and they also host private events.

If you are looking for a spot at any time of the day or evening to relax with friends and enjoy a coffee, whiskey, glass of wine or meal, I highly recommend you put Gibson & Company on your list.  Chances are you too will join the growing fan base that has quickly established them as a local favourite.  They are open 7 days a week and updates can be found on the Facebook page.
